
1lb of ground sausage(I used Jimmy Dean Original)
2 jalapeños finely chopped
1 small onion finely chopped
1/4 cup of finely chopped cilantro
1 4oz can of green chilies
1 can of ROASTED fire rotel
1 10.5 oz can of cream of celery
1 16 oz(1lb) block of Blanco Velvetta Cheese
1 8oz block of Monterey Jack Cheese

- Brown your sausage with your jalapeños & onions. Drain grease off once meat is fully browned.

- Add your ground sausage mixture back into pan after draining grease off & add your remaining ingredients.
- Do not drain any juices from the rotel or green chilies.
- With the heat on LOW, slowly begin to melt the cheese. Be sure to stir very often until fully melted.

I topped with a little shredded cheese and sprig of cilantro. This would be amazing with a dollop of guacamole and sour cream in the middle.
