Not the prettiest plate display but donโt let that fool you on the taste ๐
Ingredients:
Flour tortillas
1 jar of your favorite salsa
Pico de Gallo
Shredded cheese
1 roll of breakfast sausage( I use Jimmy Dean original)
Eggs
Brown your sausage. Once fully cooked, drain off the grease and set aside.Heat up your tortillas while your sausage is browning. Wrap in foil to keep warm.Pour half a jar of your salsa in a skillet and heat up on medium heat.Once the salsa starts to bubble up, add pico de Gallo(to your taste). Stir to mix it in well.After 2-3 minutes after you have added your pico de Gallo, crack eggs into the skillet. (I only used 2 eggs since the kids would not be eating this.) Cover the skillet with a lid.It should only take the eggs 2-3 minutes to cook once youโve placed a lid over the skillet.Grab your tortillas and fill them up ๐

3. Shredded cheese
4. Using a spatula, scoop up that egg with all of the salsa and plop it on top.
