Chili

Ingredients:

2lbs of ground beef (you can substitute with ground turkey or chicken)

1 finely diced red pepper

1 finely diced green pepper

1 finely diced yellow pepper

1 small white onion grated (you can dice if you’d prefer)

2 cans of rotel

3 oz of tomato paste

1 teaspoon of minced garlic

2 tablespoons of chili powder

2 tablespoons of cumin

1 teaspoon of garlic powder

1 teaspoon of onion powder

1/2 teaspoon of crushed red pepper (you can add more if you like spice)

Salt/Pepper to taste

**You can also add finely diced zucchini, butternut squash, black beans, finely diced jalapeños**

Toppings: shredded cheese, jalapeños, sour cream, diced onions

Instructions:

  • Brown your ground beef and drain of grease.
  • Add all of your ingredients and mix well.
  • Put the lid on your pot and simmer on low for at least an hour. Occasionally stirring.
  • Serve over rice, Fritos, plain, hotdogs, etc
